HACCP


Hazard Analysis and Critical Control Points (HACCP) is a systematic preventative approach to food safety.

EU legislation requires all food businesses to operate a food safety system based on the principles of HACCP.

The kitchens of all hotels and restaurants in Ireland must have a HACCP or similar system implemented.

It is important to know this if you are a chef coming to Ireland who is not familiar with it.

For senior chef positions, employers will expect not just to be familiar with it, but able to implement it.

Most chefs already working in Irish kitchens will be familiar with HACCP, and those training in colleges will now already be being taught it.

For those wanting to learn more about HACCP and obtain a quick certification in it, there are many quick and/or distance courses available.
